All-female bakery wins big at annual awards show

Hinba Bakery in Glasgow has won five awards at the Scottish Baker of the Year Awards 2026, including Best in Scotland for its Chocolate Olive Oil Cake.

Run by Rachel Palmer and a team of five women, the bakery includes a specialist in Californian bread and a vegan pastry chef.

Palmer said: “Winning at the Scottish Bakery of the Year Awards means earning the respect of your fellow professionals, and to have taken so many awards is an enormous tribute to the skill and dedication of the Hinba team.”

Hinba also won two gold regionals for its Empire Biscuit and Chocolate Olive Oil Cake, a silver regional for Pain au Chocolat, and a bronze regional for White Sourdough.

Fergus McCoss, Hinba’s director, recently added the bakery to his hospitality group, which includes coffee shops in Glasgow and Oban, as well as the Tusco restaurant on Glasgow’s Dumbarton Road.

The Scottish Baker of the Year Awards 2026 were held at the Hilton Hotel in Glasgow and presented by TV presenter Edith Bowman last month.

Palmer said: “People really care about what they eat, and we use only the best ingredients. Our aim now is to continue to improve and make the bakery all it can be.”

Hinba Bakery is now planning to expand into wholesale operations, bringing its products to restaurants, cafés and delis across Glasgow and beyond.

McCoss said: “Rachel and her team can be very proud of this amazing recognition from the best in the business, and I’m sure they will redouble their efforts to give the West End another year of tasty treats.”
